A few weeks ago I was able to spend a week in my favorite place, Colorado. I got to spend time with my oldest son, my sister and my nieces. We enjoyed lots of good conversation, great weather and great restaurants, my favorite was Tasty Harmony in Fort Collins, a great vegan restaurant with so many yummy things to choose from. This picture was a random snapshot of my son walking up a hill after we'd spotted a herd of elk wading in a lake up in Estes Park. I had to share it here.
I was getting tired of the black bean and rice burgers that I always made for our Sunday cookouts. I'd seen a Plantstrong recipe for Epic All American Brats that sounded interesting so I decided to try it and boy am I glad I did. Whenever I travel, which hasn't been much since Covid, I like to scout out plant based/vegan restaurants. While visiting my hometown in April, I was lucky enough to have the chance to visit Spirit Elephant in Winnetka, Illinois with two of my good friends. The food and company was fantastic, the service was excellent and the restaurant had a cool vibe. So glad my friends knew of it and knew I'd love it!!
Want an easy way to make sure you're getting your greens everyday? I use this hack everyday. Keep a container of precut greens in your refrigerator. I always have kale on hand, but use whatever greens your like. I also buy the bags of precut green salads. When preparing your meals, grab a handful (or two) of your greens and toss it on top of whatever you're eating. You'll be surprised how versatile it is and it adds a fun crunchy element to whatever your eating.
